Title: Braised Endive

Yield: 4 Servings

1/2lbBelgian endive; sliced in Rings
1smRed Delicious Apple, diced
2tbFresh lemon Juice;
2tsWalnut oil;
  Pinch salt;
  Pepper to taste;
1/2cWater;
2tbApple cider vinegar;
1tbFresh parsley; chopped

Place all ingredients except vinegar and parsley in a large skillet. Remove cover, cook 2 minutes more until water evaporates. Continue cooking over medium heat 5 minutes. Stir in vinegar.
